Lemon Blueberry Energy Balls

Serves: 24 balls

“A perfect on-the-go snack that may help manage sugar cravings and stabilize energy levels.”


Ingredients:

  • 1 cup old-fashioned oats

  • 1 cup sliced almonds

  • ¼ cup chia seeds 

  • ¼ cup honey

  • ½ cup dried blueberries 

  • zest and juice of one lemon

Instructions:

  • In a food processor, process almonds, lemon zest, juice, and honey until smooth.

  • Add in half of the oats and process again until smooth.

  • Move the mixture to a bowl and stir in the remaining oats, chia seeds, and blueberries. Stir until combined. It's easiest to use your hands!

  • Roll mixture into about 1-inch balls. 

  • Store in the refrigerator for 1-2 weeks or freeze for up to 6 months. Enjoy!
